Hey Blog Fam!!! Hope everyone is having a good week thus far. For many, myself included, I know that the past few weeks have been pretty busy getting kids ready for the start of a new school year. I've hardly had a chance to sit down and blog. I've got so many new blogs that I'm excited about reading since joining <a href="https://twitter.com/BLMGirls" target="_blank">The BLM Group</a> and I've been struggling to find the time. *tear* I swear if there was a way to actually buy more hours in the day I would. Lol<br />
<br />
So in a <a href="http://yourfavoritegoddess.blogspot.com/2012/08/lets-give-this-try-again.html" target="_blank">previous blog post</a> I mentioned taking a ME Day. I can hardly remember what I did that day because the days following have been so busy. Most days have been busy in a good way so I'm not complaining. <br />

You all know how much I love homes. The Parade of homes has got to be my favorite thing to do over the summer. Last year I saw about 90% of the homes on the tour. Unfortunately this year I haven't been so lucky; I've only been able to see about 15 of the homes. I think my favorite is a home that we saw in <a href="http://www.tollbrothers.com/CO/Toll_Brothers_at_Solterra#" target="_blank">Lakewood CO built by Toll.brothers.</a><br />

Having tons of storage, more than enough room to cook, eat and serve; not to mention great appliances, butlers panty AND a wet bar in the basement brings me tremendous amounts of joy. What more could a girl ask for? I'm telling you, I was in heaven. <br />

I'm not necessarily a HUGE fan of this bathroom, but it had everything I needed. A jacuzzi tub with a view of the mountains, separate vanities, pretty large shower and a wonderful walk in closet. That's the beauty of new construction; you can design it to your taste. I'd make a few adjustments as far as the cabinets, tile, fixtures and the color put that's pretty much it.<br />

I think this was by far, one of my favorite homes we saw that day. There were a few homes that we saw where I was like "eh!" and definitely wouldn't pay what they were asking. Not to say that they weren't nice homes but I couldn't imaging my self paying close to $200K more for a home to be closer to the city. I guess it's all about preference anyway. <br />
<br />
Needless to say this was a great day and I had loads of fun. Hubby...not so much. Not to say that he was a grouch; I think he secretly loves looking. Lol Actually he doesn't mind looking at homes but it's definitely not on the top of his list of things to do. I love him for always being so willing to take time out of his day to accompany and entertain me. Well of course that's not the only reason I love him, but you all know what I mean. He's such a team player! Lol<br />

I've been off the last few days and have been catching up on some of my blog reading, getting some much needed rest and relaxation and was able to go and see some beautiful homes. I've neglected blogging for a number of months (sad I know) and because of this I haven't been too much in the loop with what's been going on in the lives of some of my favorite people (my blog family).<br />
<br />
I want to take just a moment to send my thoughts, positive energy and prayers to one of my favorite bloggers <a href="http://mrstdj./">MrsTDJ.</a> I hope that she doesn't mind my sharing this, I'm going to assume not since she shared it on her blog. She has recently lost her husband and partner of the last 20 years. I stopped by her blog and was in tears. I can't imagine going through something so devastating, let alone having the strength to share it, as much as I love you all, with anyone. My heart aches for her and her son and I hope you all take just a moment to send love and prayers to her and her family. She shares her life so candidly with those that follow her blog, makes me laugh uncontrollably and has so often provided that little bit of humor I've needed in my day. <br />

It's been SO long since I've posted. I always get revved up about posting regularly and something called life happens to interfere. :) I have great intentions when it comes to blogging because it's so fulfilling for me, but when it comes down to it, it takes a back seat to everything else going on in my life. <br />
<br />
School started for my little guy this past Thursday so we've been getting geared up for the school year. While I LOVED homeschooling, when he was in Kindergarten, I'm loving being able to be involved with his school, building relationships with the teachers, the administration and the lives of some of the kiddies there. Last year was a great school year and I'm looking forward to this school year. <br />
<br />The Assistant Principal called me and wanted to talk with me about being a part of the Schools Accountability Committee and said they would love to have my voice. What a huge compliment. He, I and the Principal chatted about it a bit more on Back to school night and I'm looking forward to participating. <br />
<br />
I took on a part time job which has drained me physically, but I'm still doing <a href="http://www.facebook.com/pages/Amira-Lewis-Real-Estate/337845456238091">my Real Estate</a>, which I love. (Don't forget to like me on FB. Smile) To say I've been busy is an understatement. Lol I recently sold my sellers home on June 29th, which ended up being a two part closing. She was moving out of state so she closed on the 29th and the buyers closed the first week in July.<br />
<br />
She had 20 years of history in her home; raised her children there, was raising a grandchild there and the home was filled with so many fond memories for them all. The process was very emotional for her and in the end, bittersweet. I was so happy to be a part of the process and share in her journey.<br />
<br />
I'm meeting with a new client on Saturday to help in her search for a new home and am looking forward to being a part of that as well. <br />
<br />
The <a href="http://www.paradeofhomesdenver.com/">Parade of Homes</a> started on the 9th, and while the <b><i>idea</i></b> of going the first day was exciting, it just wasn't realistic with everything going on. There's that LIFE again interfering with my entertainment.<br />
<br />
I LOVE homes...everything about them...from the older to the newer, to the new build...from the architecture to the landscape...I LOVE HOMES!!! Whenever a new community pops up I make it my business to go and look at the model homes. Sometimes I will go and preview homes that I find on MLS just because, although I haven't had much time for that lately. I was pretty disappointed that I didn't make it out on the first day of the tour, but <a href="http://www.facebook.com/amun.atnah?ref=ts">Hubby</a> has agreed to accompany and go tour some of the homes tomorrow (my ME day) that are part of the tour, but have model homes open during the week. EXCITEMENT!!!!!<br />

Hubby and I are working on a project together as well. We've decided to do Children's Books, with the first <a href="http://www.facebook.com/pages/Amun-Designs/333319403424067">"Super Skin"</a> being available within the next month. Hooray!! It's something that we've talked about for sometime and now it's coming to fruition. I'm extremely excited and so is he. You can check us out and like us on <a href="http://www.facebook.com/pages/Amun-Designs/333319403424067">FB</a> and on <a href="https://twitter.com/AmunDesigns">Twitter</a> to get more info on the book, learn about Amun designs (the business) and to get involved with us as we talk about children and education. We are also working on a blog and have got the first post up, but working on the design before we go live. Stay tuned for that. :) <br />

I joined a group on FB called <a href="http://www.facebook.com/groups/303318936424230/">Bloggers Like Me</a> thanks to the beautiful and talented Leslie from <a href="http://www.fashiondujourdaily.com/">FASHOINdujourdaily</a>. It's inspired me to start blogging again. I'm <i><b>so </b></i>looking forward to checking out everyone's blog that's apart of this group. <br />

I made a comment in the group about not knowing if I <i><b>still knew</b></i> how to blog anymore and got a great response from one of the members <a href="http://www.curlsandmo.com/">Monet</a>. She told me "<i><b>get to living and writing." </b></i>This got me to thinking...and my hubby and I have been talking quite a bit about this lately... I'm SO focused on work, the real estate, kids and projects that we're working on that I'm missing out on LIVING life and doing some of the things that I find joy in. Thanks Monet for reminding me again of something that is so very important. I'm always taking care of everyone around me so much that I tend to neglect ME and that's got to stop. Not the taking care of everyone of course, just the neglecting ME. <br />

I didn't really think much of it when my little guy bought home his library book earlier in the year and it was a book about weather. I remember being pleased that he bought home something that was informative and educational and not the typical story or picture books 6 year olds usually want to check out from the library. When week after week books came home on storms, nature, and clouds and he would check out the same book weekly on Tornadoes I began to think.... "Hmm....someone is becoming increasing intrigued by weather and nature." <br />
<br />
My guy loves being outdoors and exploring and I love how he gets up close and personal with nature. He loves exploring and investigating things that he finds when we're on walks. The only thing he really has a problem with is bugs. If we can overcome that...and if I can overcome MY fear of bugs, we'll be okay. Lol <br />
<br />
His fascination has turned into somewhat of an obsession. He will spend hours on the computer and even uses my Ipad when we're in the car and all he wants to do is look up weather and specifically Tornadoes. We've had a few tornado warnings lately and every time it starts raining or the wind gets a little loud he wants to run outside and investigate. My baby even wakes up telling me about his dreams he's had about storms. Is he going to grow up to be a storm chaser? LOL <br />
<br />
I want to cultivate his desire to learn more about nature but at the same time I don't want him to be so obsessed. A friend suggested getting him a weather radio, which I think would be such a great B-day present. I've never looked into them and have no clue how expensive they are or if there are even sturdy kid friendly ones, so it's time to do some research. I do LOVE that he's taken an interest in something that is NOT your common kid activities. He such a cool kid!! Hey blog fam!!! Yes it's me again and YES I'm blogging 2 times in less that a month. I know you all are as shocked as I am. Lol<br />
<br />
As much as people get on my nerves at times, I really do enjoy meeting new people. Not to say that I'm immediately inviting them into my circle of friends (the few that I have) but I do enjoy talking to people and hearing their stories. <br />
<br />
A few months back when I first got licensed I had some flyers made and decided that I was going to do some door knocking in the neighborhood and do a little marketing. Something happened where I wasn't able to print at home and I didn't feel like going ALL the way back to the office since I had JUST left there moments ago. I opted for running to one of the Office stores near my home (that I so often confuse with one another) and make some copies so I could move ahead with my mission. Lol <br />
<br />
I'm waiting at the counter for my print job to finish and oddly enough they were having technical issues also. I ended up spending about 45 minutes in there waiting. Another woman happened to be also waiting to have flyers printed for a event for her business. We started talking and found that our backgrounds were very similar and had tons in common. She told me about her business that she was just getting up and running (A Counseling Center) and that she would like me to come to her grand opening that was happening a few weeks later. I actually attended and had a fabulous time and met some great people and a few potential business contacts. Networking is great. <br />
<br />
We've actually communicated quite a bit since then and she is such a sweet woman that is actually evolving into a friend. We've visited several times and it's funny because we end up chatting it up for hours. Lol All this to say, you can meet some really great people in the strangest of places and you never what affect those people may have on your life. <br />
<br />

They embraced me and my kids with open arms and treated us as if we were their flesh and blood. To be honest I feel closer to this side of the family than I do my own. <br />

I'm so thankful and feel SO fortunate to have in laws and extended family that mean the world to me. They are all SO very special and I love each and everyone of them. Holiday's even though we don't celebrate them in the traditional sense, are always so amazing and I love being able to get together with them and just enjoy everyone's company. I couldn't imagine spending a holiday without these wonderful people. <br />

More than anything, this Thanksgiving, I'm thankful for having such a wonderful and loving family. If he doesn’t wake up on his own he is NOT a happy camper. When I get him ready for school in the morning he is typically cranky and fusses at me about every thing that I do; from brushing his hair to helping him with his clothes to asking him about breakfast. Frustration is ALWAYS in his tone when he responds to my questions and he hits me with his classic anger face. The face is SO cute and it takes everything in me to not laugh and kiss which I’m sure would just make him angrier.<br />
<br />
The funny thing about him not being a morning person is 9 times out of 10 when it’s time for him to go to bed he protests. There used to be crying but for the most part now he just goes after voicing his dissatisfaction. Our response is always the same… “Baby, you know you’re going to be sleepy and cranky in the morning if you don’t get your rest.”<br />
<br />
Fast forward to Monday morning. He again has expressed to us that we are NOT letting him get enough rest. Me and Hubby look at each other in disbelief. This little person acting as if it’s OUR fault that he’s tired in the morning. So the solution…we bump his bed time from 8:30 to 8:00. Of course this brought tears, complaints and his best attempt at bargaining the first night. He wakes the following morning with no crankiness; a little groggy but with tons of silliness. That’s a good sign. That night at bed time he was asleep in just a few short minutes with his head buried under his pillow like an Ostrich (Hubby's words..Lol).<br />

Today was Parent's Day at Little Ones school. I always enjoy being able to go to school with him to see how he behaves at school. I enjoy seeing how he participates in class, his interactions with peers and how well he comprehends instructions that are given to him.<br />

I try to volunteer as often as possible at his school and when I'm there he always does really well. Often he comes to me for help and I always reinforce that when at school his teachers are who he needs to go to for instructions or to solve problems there that he may be having. I don't want to take authority away from the teacher and I tell him 'Just because Mommy is at school, doesn't mean that you don't listen or follow the teacher's instructions." That being said.....<br />
<br />
Including me there were 5 other parent's that attended Parent's Day. All the parent's, myself included, sat in the rear of Mrs. Alba's class and observed while the kids went about their daily activities. Little One did very well and performed his work as he normally does when I'm at school. He was focused and excited to show me how he was able how to move through each station and do the assigned work. Now we move on to his 2nd class and that's when we begin to have a little difficulty. Hubby blogged about it in previous post today.<br />
<br />
The kids began learning geometry (shapes) last week and today they began working with tangrams. It was so adorable watching them recognize and call out the name of the shapes as the teacher, Mrs. Yamada, pointed to them. So far they've learned Hexagon, Trapezoid and Rhombus. If someone held up these shapes and asked ME to identify them I'd draw a COMPLETE blank. Next they played a fun individual game where they took a Hexagon and used other shapes to MAKE or fill in the shape of the Hexagon. He did really well and seeing his little mind work as he put the shapes together made me feel good. For as distracted as he was during the instruction he more than made up for it doing his work. Not that he's going to get a pass for his behavior, but I made sure to give him encouragement for his great work. <br />

Over all I was very proud of my baby. I love watching him work, especially when he doesn't know that I'm watching. It's such a great feeling and warms my heart to see the concentration and excitement in my little guys eyes as he's learning. He's such a big boy. </tbody></table><div style="text-align: center;"></div>I was a huge tomboy growing up (my tomboy daughter is my payback) and never wore dresses, skirts or anything girlie unless I was forced to or when I went to church (which was forced also). I would literally throw tantrums and act a complete fool anytime I had to dress up. <br />

One day we were school shopping and my mom decided she was going to buy me these shoes. I cried, beg and pleaded for her not to get them. She told me I ONLY had to wear them one time to some event (I cant recall) and yall know she had me wearing those shoes every chance she got. I was HOT!!!! I remember hiding in the alley and changing my shoes on the way to school because I REFUSED to be caught dead in those ugly things. UGH!!!! Next time I talk to my mom I'm going to have to remind her of this story. I wonder if she recalls how mad I was and how I would catch an attitude and not talk to her for days when she would try to make me wear those dreaded things.<br />
<br />
I remember being like 13 and up and me and my sister shopping ourselves. My mom would just give us the money or her credit card and we'd be on our merry way. I guess my mom didn't want to put up with the mess that I NOW put up with my kids when going shopping. They are so flipping picky it's ridiculous. They'll have us out there all day going from store to store to store and find one or two things and then have nerve enough to catch attitude with us when we're like it's time to start wrapping it up so we can go home. I'm so tempted next time to just give them a limit and let them go themselves but I could really see someone coming home with a $100 pair of jeans and me being P.O-ed. I don't know what age they'll have to be before I feel comfortable enough to allow them to just go on their own. <br />
<br />
Speaking of kids... girlie is starting her 1st year of high school this year. We were nervous when we went to registration (which is really just picking up her schedule, locker and bus info) because we were told this year high school students will not be able to ride school buses because they significantly cut the number of buses due to budget cuts. Since 6th grade she's been taking the school bus because I wasn't trying to drive 50 miles a day...gas is just too expensive right now. Since the bus was available that was just the best option.<br />
<br />
This year, the idea of putting her on the city bus didn't sit well with me. Because of the length of time it would take her to get to school on the bus she'd have to leave the house every day about 5:30am to get to school on time and ride 3 separate buses. Um...not gonna happen. I was thinking I'd have to bite the bullet and just drive her, then found out that we could fill out an exception form. I was told it was on a first come first serve basis and wasn't feeling to confident because school starts this week. I found out on Friday that they are going to allow her to ride the school bus. HOORAY!!! Yall have NO idea how happy I was, I think I did a little happy dance after I hung up with the woman at transportation. That literally made my day. <br />
<br />
Little guys first week ended pretty good and is off to a great start. He was a "superstar" in both of his classes today and got an award for having doing such a good job. I'm starting to feel a little more at ease with him being at school and wasn't on edge waiting for him to get home like last week. Lol I still miss my baby when he's at school, but most of that worry has subsided so that's a plus. <br />

Alright...now that little one is in school and has an earlier bed time I'm finding myself getting tired and in bed earlier also. Time for me to call it a night. I hope everyone has a great week. Back at ya soon.<br />

<div style="text-align: center;"></div>We have been awaiting the opening of another school like my little girlies school for K-5 and now that it's happened wouldn't you know it....we're not able to enroll our little guy as planned. He did really well with home schooling last year and learned so much, but we really want him to be around other kids his age on a consistent basis. Also since the curriculum at my daughter school is so awesome and it's such a high performing school we wanted my son to attend as well.<br />
<br />
We live out of district so we had to put him on a waiting list which I found is pretty long. I'm almost certain that it will be several months before we're even able to get him in. We decided to enroll him in a school in the district that we live in because it would be easier for him to transition to a "school environment" if he did it at the start of the year as opposed to the middle or end of the year. School started on Monday and we were SO NOT prepared to send our baby off to the wolves, but decided adjusting to school would be better if we did it this way. He was SO excited about going so that was a definite plus. He's still such a Mommy's baby and so used to being around me so I was really surprised and excited by his enthusiasm <br />
<br />
So let's go over the incidents we've had so far shall we....<br />
<br />
We still allow little one to eat dairy, chicken and turkey because he's so picky as it is and we're happy when we can get him to eat anything at all. However, will not allow him to eat beef or pork so we thought it best to pack his lunch to prevent him from getting something he SHOULDN'T have.<br />
<br />
So...Day 1. he we go to pick him up and find that they were not able to find his lunch bag and he ate a school lunch. UGH!!! Lucky it was chicken or I would have been HEATED. But I know it's the first week things are going to be hectic and everyone is trying to settle into a routine. No biggie. His lunch bag got located by the assistant principal, who happens to be new this year, and I actually really like him at this point. <br />
<br />
Day 2. My baby says he had a great day, but ended up getting confused and going outside with 3rd graders after lunch instead of going back to his after noon class room. A teacher and another student helped right away to get to his class so that was great but it made me a little nervous. The teachers don't get the kids and take them back to class, they are excused from the lunch room, line up with the kids from there class and have to walk with their group back to class. The lines aren't real distinct so he followed the wrong group. That's taking him some getting used to. I'm glad the school is fairly small so that puts me at ease a bit. Then some little boy spits on him when they're walking with their teacher in the hall to math class. He told the little boy to stop and he wouldn't...nasty little thing!!!! He didn't tell the teacher because in his words "we aren't supposed to talk while we're in the halls and I didn't want to get in trouble." Aww.... my little rule follower. <br />

Day 3. There's obviously something going on with kids at this age where they LOVE to spit because while they were in a computer class the little girl sitting next to him started spitting on him. He went up to the teacher to tell her when the little girl wouldn't stop and she got mad at him for not raising his hand before getting up and he starts crying. Of course I almost want to cry because the idea of my baby being sad at school breaks my heart. So we had a long conversation last night about raising his hand and how to handle those situations. UGH!!! I don't know why little kids have to be so dang nasty and that spitting really IRKS me. THEN...at the end of the day I'm waiting to pick him up. I see the teacher coming out with the group of kids that are in his class that don't ride the bus, but don't see my baby. I ask her and she says that she believes he went in the bus line. ARE YOU KIDDING ME!!!! So I run off to where the busses are and see another teacher holding his hand and talking to him. She explains to me that she thinks he lost his line and she was getting ready to bring him to where the kids get picked up at because he told her he wasn't a bus rider. The good thing is if they don't have a bus tag they aren't going to put them on the bus. I don't know why I was worried they were going to just throw my baby on a bus. Silly me. Lol We had a long conversation with him about where to go and to make sure he's following his teacher and class to wait for me to pick him up.<br />

I was initially really put off by the whole lining up thing and them just following the kids without ALWAYS being guided by a teacher, but now that I've been up to the school all week...(YES, I said all week) I'm more comfortable because I can actually see how easy it is for the kids to move through the hallway and get where there supposed to go. I think it's just been a little difficult because it's such a new process for him, but today he had it down and did really well. I'm crossing my fingers and hoping that he doesn't come home today telling me that he's had any issues. I think if there's one more incident Hubby will be ready to pull him out and go back to homeschooling. Lol<br />
<br />
So... before yall start thinking I'm this overbearing parent that's going to be stalking the school....I was talking to his teacher when we went for the parent/teacher meeting on Friday. We were talking about volunteering and how much help is needed the first few weeks of school she asked if I'd be willing to help when I told her my schedule was pretty open this week. So there you have it. <br />

I've got more news with the other kids, but since this ended up being so lengthy we'll save that for another post. I will say girlie goes back next week, son #2 goes back the end of August, and step girlie goes back in September. Where the HECK did the summer go. I'm not ready for fall. Boo!!!! Lol<br />

Lol. After baking the cake the other day that was eatien in less than 24 hours (actually like 2 hours) I made another which came out just as good and was eaten just a quickly. Lol I did as planned and did a 2 layer cake this time with the bottom layer frosted with homemade caramel, the cocoa glaze then a layer of berries. It was then topped with the cocoa glaze and more berries. It came out much better this time and I have to say I was pretty pleased with myself, although I wont go so far as to say I'm a baking connoisseur just yet. Lol<br />

The downside is that it wasn't as smooth as I wanted it to be due to the turbinado sugar. I don't know a workaround for this yet but I'm going to definitely find one. You could really taste the difference much once it was put on the cake, but I'm striving for perfection here people. Lol</div><div style="text-align: left;"><br />
</div><div style="text-align: left;">I think I mentioned the other day how badly I had been wanting crepes and I found a vegan recipe <a href="http://allrecipes.com/Recipe/vegan-crepes/detail.aspx">HERE</a>. The first one that I made ended up being a little too thick for me so I added a bit more soy milk (I should have measured it..UGH) and let it chill for an extra half hour and then they came out perfect. Who knew!!! I just topped them with a berry compote that I made that tasted similar to a strawberry syrup and it was extremely tasty. I'm actually wanting more today, but I'll refrain. I found the Risotto (Yes it came from a box!!!) at Whole.Foods and was happy to find there were no animal products in it. HOORAY! It was surprisingly tasty so I'm sure we'll be buying that more often. I made a seasoned batter for the fish and since we were out of Panko I ended up using these Quinoa Flakes that we had. Hey...I work with what I got. Lol I don't really like frying and it's not something I do often AT ALL but I was in the mood for fried fish so I gave in and was happy with the results. <div class="separator" style="clear: both; text-align: center;"></div>I really surprised myself this evening. I made a fabulous dessert and dessert isn't even my forte. I guess it's not THAT difficult if you follow a recipe, but for some reason I was always intimidated when it came to baking. It took a few bad experiences for me to just say forget it and hang it up all together. I'm starting to feel encouraged, especially after my husband just told me that I made the greatest dessert he's ever had and said "My tummy is doing a happy dance." And then I just about fell out when he said he needed the Yo Gabba Gabba suit so he could dance around like <a href="http://www.youtube.com/watch?v=6Os-CACRwM8">Dj Lance </a>so he could do the party in my tummy dance. WOW!!! Lol. <br />

I tried my hand at baking and used <a href="http://www.instructables.com/id/The-BEST-chococlate-cake-ever...that-happens-to-be/">this recipe</a> to make a chocolate cake and added a little bit of a spin to it. I added some raspberries to the glaze and boiled it so the raspberry flavor could be absorbed in the cocoa. I added caramel to the cake and then added fresh raspberries and blackberries. So we had the cake with vegan vanilla ice cream and a tiny bit of mint and it was DELICIOUS!!!!. I mean really. The cake was pretty simple and very good. I of course substituted the flour and the sugar for agave honey, but followed the recipe for the mix pretty much to the letter. <br />
<br />
I was a little disappointed because when I flipped my cake some of it stuck to the pan. What I ended up doing was scraping out the cake the was stuck to the pan and pressing it into a tiny dessert bowl, cutting up berries, adding some caramel and pressing another layer of cake on top and then adding chocolate sauce and ice cream. This was a definite winner and the end product:<br />

I also had NEVER cooked polenta before and wanted some really bad so I decided to cook that. It was actually pretty good but I felt it was a little to heavy for the fish and decided to cook a Coconut and cashew basmati rice. It had a GREAT spiciness to it and it went really well with the tuna. But I still wanted the polenta so I served both. I know I know....don't even say it. Up until about a month ago we haven't had cable in almost 2 years I think. We decided to just watch movies and shows on netflix and stop spending so much of our day in front of the TV. I have been once again obsessed by HGTV and my new love...The Food network. Every time there's a commercial I'm flipping back and forth between the two channels. Lol I love Food network star and was thinking to myself, I'd LOVE to go on that show. They need to do a vegan one so I don't have to worry about making meals with dairy or meat. Lol Probably not gonna happen. People come up with the MOST creative meals and I find myself thinking "I'd like to try that... " Some of it looks sooo good and the flavor combinations have my mouth watering. I could literally sit here all day for days and watch these two channels. Talk about addicting.<br />

So I was watching Food network star and everyone was raving about <a href="http://www.marybethalbright.com/recipes/the-meatloaf-recipe/">one of the finalists, Mary Beth Albright's meat loaf recipe</a>. This was a food that I LOVED and probably could have eatien weekly (or more) when I ate meat. So I found the recipe and I'm going to give it a try and Veganize it. Is Veganize a word? Lol. It's funny because it seems like whenever I'm trying to fast I end up wanting to try out different recipes. I'm thinking it's probably not a good idea to fast and watch food network because I'm REALLY hungry. Lol. My husband is doing a raw food fast and says I'm torturing him by having him watch Giada at Home. Lol. He doesn't even like Mayo or raw fish but he's saying how good this sandwich looks that she's making. Hilarious!!! Day 1 may be a fail!!! Lol Lets see if we make it.<br />

I usually use OPI but have a few other brands that I use every once in awhile. I was in the store the other day and saw that Revlon had this top speed (dries in 60 seconds) nail polish with pretty bright and fun colors. I decided to give them a try.<br />

The nails on my hands don't grow much; they get to a certain length and chip and peal. I've tried everything and nothing I can do, short of getting fake nails will help them grow. I gave up on fake nails years ago. So with my nails being so short I usually will give myself a french manicure, which I've gotten pretty good at doing, or wear clear polish. The colors I bought were so cute and after I polished my toes I decided to do my fingernails also. They didn't turn out so bad. Because the color dries so quick I'll be changing the color all week. </div>So this was my experiment with color. I think I may start painting the nails on my hands on a regular basis now since I love most of these colors. Now I'm wanting to go on a polish shopping rampage. Lol My favorites were pics 1, 2, 5, and 7. I realize I don't really care for the pale colors so much, it doesn't go well with my skin tone and for some reason they just look a little dull to me. The Black Star had a bit of a silver tint to it that I really loved. I'll probably be wearing this one for the remainder of the week. The Yellow I want to just toss in the trash and I doubt I'll ever wear it again. It actually looked cute on my girlies hands so I'll probably just give it to her since she's decided that she now likes her nails done. YEAY!! Maybe she's turning the corner from tom boyishness. I've been craving Ahi Tuna for awhile and we haven't bought it because its always so freaking expensive. I finally broke down and bought some yesterday for today's dinner and OH MY GOODNESS. I need to really become a chef because I amaze even myself sometimes.<br />

I love my fish sometimes with a little bit of sweetness to it and tried something a little different. I'm not going to tell what I used in the event that I break down and write a cook book. Lol I will say that it was probably the best Tuna I've ever made. It was perfect.<br />

We've been doing a pretty good job cutting down on our carbohydrates. We were overdosing on them daily multiple times a day so I have to say that I'm pretty proud of myself. There are days where I want to just indulge in a whole loaf of bread all by myself, OD on potatoes, rice AND pasta....in the same meal. Lol Ok, maybe I'm exaggerating just a little bit. JUST A LITTLE.<br />

So our dinner this evening was Ahi Tuna, Steamed broccoli, with Strawberries, Pineapple, and Nectarines. It was actually pretty filling not to mention delicious. I could probably eat fruit all summer long. Often times when the weather is warm I have to eat really light because my stomach will begin to feel a little queasy. I could probably do a soup, salad and fruit diet all summer and be cool. I had the best cherries and cantaloupe the other day. <a href="http://cookingwithalycat.wordpress.com/">Aly </a>posted a recipe for drunken melon balls on her face book page and I'm so trying these, minus the liquor of course. <br />

She says she was heavier, but I don't recall. She's been training for some track circut and I haven't seen her in about a year. I happened to see a <a href="http://www.youtube.com/watch?v=BmLa9U9BPLQ">video on FB</a> that she did working out and was like WOW. She had mentioned awhile back that she was going to start training people and had considered having her train me but then never followed through. After seeing the video I was definitely motivated and decided let me give her a call and set something up. <br />
<br />
So today I had my first workout with her and let me just say it was intense. Not anything like in the video because that would truly kill me. I did better than I thought I would but know that I have still such a long way to go. I was sweating and huffing and puffing like crazy. She took my measurements the other day...which I wont even tell you about, but I may post some before and after pictures. I'm giving myself 4 to 6 weeks to start seeing results and I have to say I'm really excited. I'll keep you guys updated on my progress provided I don't die from pain and exhaustion in the mean time. <br />

I think Jameil may love food as much as I do. Lol First let me say I don't technically consider myself vegan since I still eat tuna and salmon....but I'm headed in that direction.<br />

Her question got me to really begin thinking about my food journey and all the ups and downs that come along with changing your diet in such a way. It's funny because when people found out I was vegetarian I would always get the same response..."so you only eat fruit and vegetables." I think that's so hilarious. I think people equate VEG with vegetables and think that every thing else is off limits. This is so far from the truth.<br />
<br />
I've always, even when I was little, loved fruits, vegetables and grains so when I eliminated meat from my diet it wasn't a huge adjustment. Around the age of 19 or 20 I gave up beef. There were a few times where I would indulge (anytime I went to Benihana) but for the most part only ate chicken and turkey which I eventually gave up in 2009. Shortly after I stopped eating dairy, which was a little more difficult since I LOVED everything dairy. I would use it in excess and am surprised I don't have high cholesterol or heart problems as a result. I loved it so much that even though it would kill my stomach I would still indulge and pay for it seriously later. Crazy right? My daughter has severe allergies and eczema and we've noticed that she's has significantly less trouble with them after giving up dairy. It's funny how changing your diet in small ways can impact your health in such a way. <br />
<br />
I've always enjoyed honey. I would eat in on my toast, and love it in my tea. It wasn't until recently that I learned about Blue Agave honey and began to use that and it's become a staple in our house. I've heard recently that it's not too much better than actual sugar, so I'll have to do a little more research and find an alternative. But in the meantime I'll stick with the Agave as my sweetener. I used to always use Turbinado or raw sugar, but we've kind of steered away from using that also. <br />
<br />
I wanted to get away from using all purpose white flour and began using Spelt which is a wheat flour that's supposed to have a lower percentage of carbohydrates and fat. I also read somewhere that all purpose flour has a negative impact on joints and since I'm having arthritis issues I thought it best to remove this from my diet. Needless to say Spelt flour is also a staple in our house.<br />

There are other things but this is all I can really come up with at the moment without running into the kitchen. We eat a lot of the same meals we did before we just substitute or omit the meat from the recipe all together. I'm learning a lot about how my body responds to certain foods I eat. I've noticed how I feel drained and sluggish when eating certain foods or how I feel hungry shortly after eating others down to what foods give me energy and don't have me feening for like a crack head an hour later.<br />
<br />
I was also asked what foods I miss since changing my diet. Even though it hasn't been too difficult, there are days when I think about fried chicken, or when we're at the families for the holidays and I'm tempted to eat a piece of turkey and dressing. My dressing was the BOMB!!! And baked macaroni and cheese or ravioli!!! I have been dying for some ravioli for months and am starting to think I'm going to have to break down and buy a pasta maker and make my own. Oh and let me not forget to mention French toast. There's a place here in CO called the Egg & I and I swear they had the best french toast I've ever tasted. I tried making a vegan french toast and.....lets just say it didn't go over too well. Just GROSS! There's somethings that you just cant alter and make them taste good no matter how hard you try. I used to LOVE cheese eggs...so much so that several months after I gave them up decided to try some. Um...yeah...that didn't go over well either. They almost came right back up. I felt sick for hours after and like I was on the verge of losing my lunch. I haven't craved them sense. UGH!!! <br />
<br />
So there you have it. A little bit about my food journey. What we do currently works for us and for our family minus the little one and the 20 yr old. The 20 year old will not succumb to the evils of our diet. Lol. He's a funny character. The little one is picky anyway and getting him to eat food PERIOD is a challenge. If someone can help me overcome that little hurdle I'll be a happy person.<br />

My children have grown right before my eyes and I don't even notice sometimes until there's some type of event that signifies their growth. Have I ever mentioned how much I love my kids? I really do. As much as they drive me insane and I want to smack them upside their heads for doing and saying something crazy. I love each one of them and am realizing now more than ever how much I need to cherish each and every moment, good and bad, because once these moments are gone...they're gone forever. <br />
<br />
My son is going on his 3rd year in college which is amazing to me. It seems like just yesterday he was just starting high school and I was worrying about how he would make THAT transition. Now he's an adult recently promoted to supervisor at his job and making his own way. I couldn't be more proud. I'm sure I've said that a million times and will probably say it a million more.<br />
<br />
My daughter continuated with honors from 8th grade and will be in high school in the fall. It's amazing how much she's grown even in the few short years we've been here in CO. I was looking at a picture that we recently took and wondering when she got taller than me. I've seen her grow from a sweet, shy, quiet little girl to an outgoing, witty, intelligent, amazingly talented young lady. I'm proud of how hard she works to maintain her grades and how committed she is being a great student. How could a parent not love that?<br />
<br />
Little one continues to impress us daily with how much he's learned this past year now that we've officially begun home schooling him. It's funny because he'll say things or do something and I'm thinking; I don't even think that's a concept or a lesson that we've worked on and wonder how on earth he picked it up. Kids truly are sponges. I just have to find a way to get him to be more cooperative when it's time to sit down and study which has been sooo challenging. Overall it was a great school year and I have to say I'm pretty pleased. <br />
<br />
My eldest...21 started a new job recently. I don't get to see what's going on with him in his daily life like I do with the other kids since he lives in MD, but I'm just as proud of him as I am of the others. My baby is no longer a baby but officially a grown up. We've had our ups and downs and our battles like most parents have with their kids. He's had his struggles and has still endured. I love when he calls me and tells me that he understands now all the lessons and the reasons behind the everything I've tried to teach them. It's nice to know that he is finally getting it. That's a great feeling.<br />
<br />
And then there's my step daughter. I'm looking forward to her visit next month and am so happy with her accomplishments this school year. She started a new school in a new state and I was a little nervous about how things were going to go since she was so resistant about moving. It turned out that she really loves her school and enjoys her teachers. It seems like she's getting so much more out of her education now that she's in a new state, new school and surrounded by new friends. She's making better choices when it comes to her friends and I definitely love that. She's excited about learning and calls us and tells us about projects that she's done, grades and even sends us presentations she's worked on so that we can see. I love that she takes so much pride in her performance at school.<br />

All the kids work my LAST nerve and often times I feel like they cant grow up fast enough, but I really do enjoy watching them grow and become unique little people with their own minds. I love my babies!!! Frustrating as they all can be at times. But I think that's their job as kids. Lol<br />

I'm not big on baking but since these are so simple (I know you guys are thinking to yourselves, "she says that about everything") I decided to go ahead and bite the bullet and make blueberry muffins. I don't know what my hangup is about baking. I'll do chocolate chip cookies and muffins and that's pretty much the extent of it for me. I haven't been able to find chocolate without milk in it, with the exception of bakers chocolate so when I make cookies I just chop that up and use that instead of chips. I love these muffins. I always use a few more blueberries than the recipe calls for because I love a lot of fruit in my muffins. I've used this same recipe and made raspberry muffins and a mixed berry muffin. So delicious! Prep time is pretty quick...I keep forgetting to time it, but I would say ten minutes max and then 22 minutes to bake. <br />

I wanted to run to the grocery store the day I saw them and make it for dinner that night, they looked so good. </div><div style="text-align: left;"><br />
</div><div style="text-align: left;">I haven't had lasagne since we gave up dairy almost about 2 years ago I think. I am a pasta fanatic and lasagne was probably one of my favorite foods but what's lasagne with out cheese? Spaghetti I think. Lol I found a cheese called Daiya about a year ago, and it took some getting used to. I can eat it in quesadillas, burritos and a few other things but using it in large amounts like you would need for lasagne or pizza just wasn't very pleasing. I tried it on pizza and although it melted it didn't quite melt the way cheese did and had a weird oily slimy texture. I know, NASTY right? So I kind of hung up the idea of having lasagne. Oh woe is me. Well, that is until a few days ago. </div><div style="text-align: left;"><br />
</div><div style="text-align: left;">When I found this recipe I figured, because the cups are the size of muffins you would only need a little bit of cheese in each cup...THAT I can handle. I have yet to find a vegan ricotta cheese or cottage cheese so I did substitutions like I ALWAYS do. Lol. I don't even know if it's possible to make either of those cheeses vegan, but you never know. I was surprised to find vegan sour cream and cream cheese. Who knew? So that's what I chose to use instead. So I'm going to need you all to be open minded for a sec. Ok? The cheese melts really well that way and actually thickened the sauce a little bit. When I DID eat dairy, I would use that also along with ricotta and the other cheeses and it was always a hit. When I lived in MN there was a restaurant called Copelands that has a New Orleans style menu. I've heard the MN location actually closed some time ago which is really sad because the food was ridiculous! I know they made tons of money off of me because I used to go there every chance I got. My Sister and a few of my best friends threw me a surprise b-day party there when I turned 33 or 34. Best party ever! But that's a story for a different day. Anyway....they had this spinach and artichoke dip and I swear it's the best I ever had. I settled for Olive Gardens dip when we moved away, which was pretty good, but definitely not as good as Copelands.<br />

Yesterday I decided to try my hand at making a vegan version to satisfy my craving and it turned out pretty good. I'll have to play around with the measurements a bit because it was a little too zesty for me; I think it may be due to my not using fresh artichokes. I was being lazy and didn't really feel like taking the time to cook them so I just decided to buy the ones that come in the jar. I used spinach and artichokes of course and then a vegan cream cheese, vegan mozzarella instead of parmesan (haven't found a vegan parmesan cheese yet) sour cream, and a few other ingredients I can recall off the top of my head at the moment. It wasn't really complicated and didn't take very long to prepare. Everyone enjoyed it which you know always makes me happy. I chose to serve it with some warmed garlic naan that we had....they actually went pretty well together.<br />

I had planned on taking pictures of each step but there wasn't much required so I scratched that idea. When I say this was simple I mean it. All you had to do was sautee the onions, then spinach for 10 minutes, add the creamed coconut, vegetable broth seasoning, milk and then VOILA! Sounds easy right. So easy even my 5 year old could make this. Ok....maybe I'm exaggerating a tad bit, but it really was something even the most unskilled cook could make and have it turn out perfectly. I not then I strongly advise that person to STAY OUT THE KITCHEN! Lol<br />

I added roasted zucchini and red peppers, onions, mushroom and tomato with a balsamic vinaigrette. Delicious! The soup was very tasty. It didn't taste like spinach at all. I cant really describe the flavor, but it was really good and the nutmeg was a great addition to give it that little zip. We added cayenne to our individual bowls....we put cayenne on everything...don't ask. Lol </div><div style="text-align: left;"><br />

So it's Friday and it's a beautiful day outside. It's only just after 11am and already 68 degrees outside. We're supposed to hit 80 today and you all know how I LOVE the heat and abhor the cold, so I'm looking forward to it. You would think that since it's going to be so nice I'd have a little more energy but for some reason I already feel like I need a nap. Did I mention it's only 11am? Crazy! I'm not even a nap type person. Ugh! I've got to find a way to get my energy up.<br />
<br />
I'm a little bugged because as nice as it is and as nice as it's going to be this weekend, I'm not really going to be able to get out the way I would like because of my back. It was horrible a few weeks back. It actually locked up on me which it hasn't done in awhile and I couldn't even walk up or down the stairs. I think it was about 3 or 4 days before I was actually able to really move around good. These past few days it's actually been really hurting and I'm feeling that frustration come back. I'm trying to be positive, but I'm really not seeing any end in sight with my back woes. Ok....moving on before I really get upset. UGH!<br />

So my Locs are really coming along. I'm amazed by how much they've grown in four months since starting them. People always say the my hair grows really fast, and I've never felt like it, but when I look at the difference between now and then, WOW! I went and got them done yesterday and I'm happy to say it wasn't as painful as it had been in the past. I attribute that to the length now. Yeay! For those of you that missed it, I'm horribly tender headed....to the point where I always feel like a little kid on the verge of tears when I go to get my hair done. Even prior to the Locs. Sad isn't it? I'll have to take a picture and post it so you all can see and compare also. <br />

I'm so excited....there's an Ikea opening sometime in July. I've missed it so much since moving from MN. I was so disappointed when I found out there wasn't one here when we moved here. There's also an H & M opening, if it hasn't already. I'm hoping that it's already open because I need to find a continuation dress for my little girlie. Finding shoes for her is going to be challenging because she wears a 10 and a half or 11 depending on the shoe, plus her feet are really narrow. Shoe shopping is going to be a pain in the butt. I'm excited about finding something for her but the downside is, since she's such a tomboy I'm sure what ever we find will only get worn the one time. Wish me happy shopping people. Lol<br />

Hey Good People!!! It's been a minute. I hope everyone had a nice and peaceful weekend.<br />

So I was talking to the 2nd Son the other day... I don't really recall how he and I got on the subject but he stated that he was considering moving out with a friend in a few months. I've got some serious mixed feelings about it, but keeping in mind at the same time, it's not MY decision to make. He had some issues when he was living in the dorms last year with his room mates, which I think he handled in a very mature manner, so I had to use that as an example when talking about this possible new situation. I had to convey to him that getting an ACTUAL apartment with a friend is a little different than living in the dorms.<br />

I explained that although they may be friends, known each other for some time and hang out quite a bit that's not a really good indicator of what it will be like to LIVE with that person. I had to let him know that if they have a falling out he's committed to that lease and cant just up and leave, or if that person can make their share of the rent it will be his responsibility to pick up the slack. I just don't think it's wise, although I'm not going to stand in the way of him having that experience and learning for himself. I just want to point out all of the facts that he needs to be cognizant of going into the situation that he, being only 20, may not really think or be aware of.<br />

Of course we talked about the financial aspect, bills, car, insurance, and still being able to have time for school responsibilities and studying. He's been working quite a bit for the past few months but working full time may be a bit much while trying to juggle school. Usually he doesn't start working until the end of April or first part of May but he's been working since the end of January which is great because it's given him the opportunity to save up more money.<br />

He's a very responsible young man and I'm extremely proud of him and all his accomplishments up to this point in his life and I know that he's going to have to make his own decisions without my influence. I feel like if he does move out, regardless of how it turns out, it's just yet one more step in his journey to adulthood. I'm still amazed at the fact that he'll be starting his 3rd year in just a few short months, I know he is just as amazed because we were doing his fafsa the other day and when we got to the question about what year he'll be in when school starts he was like "wow!" That's so amazing. <br />

Now if I could get the others to hurry and grow up things will be just gravy. Kidding....kind of. Lol I know once they're grown and gone I'll be sad, crying and lonely for my kiddies, but there are times....and I have to say it's been frequently lately where I feel like...UGH!!! They just cant grow up fast enough. I know I'm not the only parent out there that feels that way right? RIGHT??? Lol<br />
